Kim Pace

General Manager

Our General Manager Kim Pace started her training at the Institute of Tourism Studies of Malta and then furthered her knowledge in wines at The Wine & Spirit Education Trust (WSET). In 2010 she placed first as Best International Sommelier in the Gran Trofeo d’oro della Ristorazione Italiana.

Kim held a number of key positions within the industry both locally and overseas with work assignments at the prestigious 2 AA Rosette Lakeview Restaurant in Cumbria UK, Bianco’s in St. Julians for four years and joining Relais & Chateaux in 2013, taking up the position of Sommelier and manager in two of Malta’s finest restaurants.

Kim joined Palazzo Castelletti in 2014 as restaurant manager of RedWhite and then successfully moving her way up to various other positions within the company included those of San Andrea restaurant manager, Assistant General Manager and General Manager since 2016.

Despite her relatively young age Kim puts a lot of her creative imagination, attention to detail and above all her love of food and wine at work giving our esteemed customers a unique dining experience.

Manuela Corellas

Business Development Manager

Graduated in Advertising Communication at the University of Perugia (Italy) in 2010, Manuela continued her studies in Rome at the International Hospitality Management Academy, with a specialization in Marketing.

After completing her studies, she held the position of Marketing & Sales Executive at Fonteverde Collection, a 5-stars Hotel Group in Tuscany.

Following her passion for International Hospitality, she worked for the Walt Disney Restaurants Group in the United States and afterwards moved to Dubai in 2012, where she assisted the opening of a new catering concept and worked as Restaurant Supervisor for the same company for 2 years.

In 2014 Manuela moved to Malta and joined Palazzo Castelletti, managing the promotion of the venue and coordinating private functions.

Manuela’s professional education, passion for catering, international work experience and meticulous organisational skills ensure top class events each and every time.

Chris Ellul

Executive Head Chef

Our Executive Head Chef Chris Ellul after following a Diploma in Hotel Operations Management in the Institute of Tourism Studies of Malta, he started his working career in some of the most reputable hotels and restaurants on the island holding various diffrenet positions in different kitcen concepts.

Since then Chris has joined Palazzo Pariso in Naxxar in 2009 whereby he worked for 7 years, and got exposure for loads of experience in managing events, corporate banquettes, weddings, afternoon teas, restaurant lunches and dinners to very high standards and under different chefs.

He joined Palazzo Castelletti in 2016 where he immediately made headway with his inspiring cuisine skills and introduced new fusion concepts to our San Andrea menu.

Following his successful performance at San Andrea he has been appointed as Executive Chef at Palazzo Castelletti overseeing all the food oeprations of the Palazzo and ensuring that the quality standards are maintained throughout in both San Andrea and RedWite kitchens.

Josef Buttigieg

Head Chef – San Andrea Restaurant

After graduating from ITS he starting his working career in 5 star Hotel Ta’ Cenc Gozo, In 2004 he then decided to expand his culinary knowledge working in one of the most reputatble hotels on the Isle of Man whereby he spent 13 years working at the Hilton hotel occupying various positions within its different fine restaurants.

Comes in with a wealth of knowledge after having working for 13 years in the Isle of Man, Josef Buttigieg occupying various posts with prominent hotels on the island, he came back to Malta doing one year as a Sous Chef of Salt Kitchen and lounge. He then joine San Andrea restaurant as a Sous Chef to then be appointed as a Head Chef of the same.

He latter joined The Gallery Restaurant within Sefton Hotel (Isle of Man) being a 50-70 seater fine dining 2 Rosette Award Restaurant with a Taste of Man Gold Award which I was the head chef and manage to achieve during my time at the Sefton Hotel. Going up the ranks and ending as a Head Chef with the same.

With Josef at the helm San Andrea kitchen runs in a smooth, efficient manner ensuring that food is prepared to the highest standard.

Andrew Fenech

Chef De Partie – San Andrea Restaurant

After obtaining his diploma in culinary arts, Andrew started his working career as a commis chef in 2012 whereby he was a student worker combining both his diploma in culinary arts studies at ITS with his work duties, gaining valuable experience in along the way. Amongst the restaurants and hotels he worked in was a two years experience at the prestigious Xara Palace Relais & Chateaux in Mdina (Malta).

During his studies Andrew did a one year work placement with the prestigious Corinthia Hotel in London whereby he was exposed o working in its various restaurants a la carte, buffets, functions and weddings.

Given his relatively young age Andrew would like to keep on working side by side our team of very talented chefs in order to gain more work experience.

Andrew has been working with us at Palazzo Castelletti since 2015 and is a great person to have within our team. We look forward to see him grow further within the company.

Christos Gogos

Sous Chef – RedWhite

Christos is one of the new additions to our strong team. He has a 12 years wealth of experience working in different kitchens mainly in different parts of Greece but also in Scotland. After graduating from Le Monde, Institute of Hotel and Tourism Studies in Greece, he worked as Apprentice, Commis Chef and Chef de Partie in various international restaurants in Athens between 2005 and 2010 learning there different cuisine styles and concepts.

In 2010 he then took his first position of Junior Sous Chef at the four star Hotel Naxos, Greece where he was exposed to his first kitchen management and supervision duties in Greek cuisine.

In 2014 he was given his first role as a Head Chef in “Lordos” restaurant Athens Greece. He also worked as a Sous Chef in the 5 star Naxos Imperial Hotel, and as Head Chef in prominent 4 star Antinea Hotel until his last job duties were at the 4 star Hotel Courtyard by Marriott in Aberdeen Scotland as a Sous Chef.

The Redwhite kitchen brigade has been given a big boost with his joining and the sky is the limit on the creativity of cuisine styles that can be implemented.

Ronnie Attard

Restaurant Manager – RedWhite

Our Restaurant Manager Mr Ronnie Attard, has over 35 years of catering experience. Having started work at Villa Rosa as a chef de rang at a very young age, he then continued on a development path learning etiquette and sterling service within the industry. Ronnie moved to Fortina Spa Resort in 1990 where he has worked his way up to various different positions within the company until his last assignment there as Hotel Duty Manager.

After a year working as Restaurant Manager at Crave restaurant, he joined the Palazzo Castelletti team for the first time in 2014 as Restaurant Manager of San Andrea restaurant only to be interrupted for a short period working at the Galley. He now has returned back to working with us as Restaurant Manager of our very busy restaurant RedWhite.

Ronnie brings with him a wealth of experience which he is eager to put to great use in providing a sterling service to our esteemed customers.

Victoria Wittner

Assistant Restaurant Manager – RedWhite

Viktoria has been in Malta since 2014 and has had the opportunity to work in a number of good busy restaurants since.

During her catering experience in Malta, she worked hard to learn and develop new skills in order to improve her performance and position. It is throughout her work experience and ongoing tuition that she learned the art of good cocktail making. She has indeed become a very talented Bar Tender.

A talent that at Palazzo Castelletti she is putting to good use by making a lot of signature cocktails. She is so good that she has now been appointed as the person responsible to come up with our new cocktail menu, the recipes for the coktails and training for the employees.

Viktoria is ambitious, willing to learn and improve, a good team-worker, very communicative and a positive person. Qualities that made her become the Assistant Restaurant Manager. When she is on duty she proves to be the best loyal support for our Restaurant Manager and the rest of the Palazzo Castelletti team.

Lorena Pecoraro

Graduated in Foreign Languages and Literatures at L’Orientale University of Naples (Italy) in 2007, after completing her studies Lorena moved to Dublin to improve her English, moved by her passion for the Emerald island.

During her time in Ireland she worked as Supervisor for an indipendent coffee place in the hearth of Dublin, near the Trinity college, and as Assistant Team leader for the Barclays contact centre, following her passion for customer service.

Lorena gained a long time experience in Customer service, been always working focusing on customer’s needs, even if in different environments.

She moved to Malta in 2014 and after working for Hsbc, she decided to go back to her passion for Hospitality and Tourism.
