Ivana Ranisavljevic

General Manager
Our General Manager Ivana Ranisavlejvic after following a Diploma in Tourism and Hospitality in Serbia, she started her working career in some of the most reputable hotels in Belgrade holding different roles.

Since then Ivana has joined Real Estate company in Doha, Qatar as a Business Development Manager and got exposure for loads of experience in setting goals and plans in order to acheive company targets, marketing, staff management. After that, she joined the Chain of Fine Dining Restaurants in Middle East as an Events Manager where she was handling all internal and external company events.

She joined Palazzo Castelletti in 2019 as Events Coordinator.
Following her successful performance in this role she has been appointed as General Manager at Palazzo Castelletti and became in charge of overseeing all the operations of the Palazzo and ensuring that the quality standards are maintained at all the times.


Matthew Darmenia

Executive Head Chef

Our Executive Head Chef Matthew Darmenia graduated from the Institute of
Tourism Studies with an Advanced Diploma in Culinary Arts, after which he
traveled to Ireland, UK and Italy to gain a vast experience in different
cuisines, techniques and traditions over a 5 year period.
He returned to Malta in 2010 as Sous Chef at Sale e Pepe in Portomaso
where he eventually earned the Head Chef position. Later he opened One
Portomaso as Head Chef, taking charge of different types of cuisines under
one roof.
Matthew joined us in 2019 where he has been appointed as Executive Head
Chef at Palazzo Castelletti overseeing all the food operations and ensuring
that the quality standards are maintained throughout.


Ronnie Attard

Restaurant Manager – San Andrea Restaurant

Our Restaurant Manager Mr Ronnie Attard, has over 35 years of catering experience. Having started work at Villa Rosa as a chef de rang at a very young age, he then continued on a development path learning etiquette and sterling service within the industry. Ronnie moved to Fortina Spa Resort in 1990 where he has worked his way up to various different positions within the company until his last assignment there as Hotel Duty Manager.

After a year working as Restaurant Manager at Crave restaurant, he joined the Palazzo Castelletti team for the first time in 2014 as Restaurant Manager of San Andrea restaurant only to be interrupted for a short period working at the Galley. He now has returned back to working with us as Restaurant Manager of our very busy restaurant RedWhite.

Ronnie brings with him a wealth of experience which he is eager to put to great use in providing a sterling service to our esteemed customers.
